On Simchat Torah we conclude the reading of the Torah scroll with the letter lamed in the word Yisrael. We begin the torah again with the letter bet in bereshit. When we connect these two letters, lamed and bet, we spell lev, the Hebrew word for heart. This  teaches us to put our heart and passion into torah.
